Directions

  1. Boil the Pasta
Cook spaghetti in salted water until al dente. Drain and set aside.
  2. Cook the Shrimp
In a skillet, heat butter and 1 tbsp olive oil over medium heat. Season shrimp with Cajun seasoning. Cook 2–3 minutes per side until pink and just cooked through. Remove shrimp from the skillet and set aside.
  3. Sauté the Vegetables
In the same pan, add remaining olive oil. Sauté onion, garlic, red and green bell peppers until tender, about 3–4 minutes. Stir in diced tomatoes.
  4. Build the Creamy Sauce
Add Cajun seasoning, smoked paprika, and black pepper to the vegetables. Pour in chicken broth and heavy cream. Simmer for 5 minutes until the sauce slightly thickens and flavors meld.
  5. Combine Pasta, Shrimp & Cheese
Add cooked pasta and shrimp to the skillet along with half the mozzarella. Toss gently to coat everything evenly in the creamy Cajun sauce.
  6. Transfer to Baking Dish & Top
Grease a baking dish and transfer the pasta mixture. Sprinkle the remaining mozzarella and Parmesan cheese evenly over the top.
  7. Bake
Bake at 375°F (190°C) for 20 minutes, or until bubbly and golden on top.
  8. Serve & Garnish
Remove from oven and sprinkle with fresh parsley. Serve hot with garlic bread or a crisp green salad for a complete comfort meal.
