Creamy Chipotle Shrimp Rice Bowl

Introduction

This bowl is a bold, creamy, and slightly smoky seafood delight! Juicy shrimp coated in a chipotle cream sauce are served over fluffy rice with fresh veggies for a satisfying, high-protein meal. Perfect for lunch, dinner, or meal prep.

Ingredients

For the Chipotle Shrimp

  • 1 lb (450 g) large shrimp, peeled & deveined
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp smoked paprika

For the Creamy Chipotle Sauce

  • 1/2 cup sour cream or Greek yogurt
  • 2 tbsp mayonnaise
  • 1–2 chipotle peppers in adobo sauce, minced (adjust to taste)
  • 1 clove garlic, minced
  • 1 tbsp lime juice

  • 2 cups cooked white, brown, or cilantro-lime rice
