- Prepare the Steak
Bring steaks to room temperature and pat dry with paper towels. Season generously with salt and pepper. Heat olive oil in a skillet over high heat. Sear steaks 3–4 minutes per side for medium-rare, adding butter, smashed garlic, and rosemary during the last minute to baste. Remove steaks and let rest for 5 minutes. - Cook the Shrimp
In the same pan, add 1 tbsp butter. Sauté minced garlic for 30 seconds until fragrant, then add shrimp. Season with smoked paprika (or Cajun), salt, and pepper. Cook 1–2 minutes per side until shrimp are pink and slightly golden. Squeeze in lemon juice and toss to coat. - Make the Garlic Butter Sauce
In a small bowl, melt 3 tbsp butter. Stir in minced garlic, chopped parsley, lemon juice, and chili flakes if using. - Serve the Surf & Turf
Slice the steak against the grain. Arrange shrimp on top or alongside the steak. Drizzle generously with warm garlic butter sauce. Garnish with extra parsley and a wedge of lemon.
