- Flip & Butter Baste: Flip the cod carefully and reduce heat to medium. Add butter and garlic to the pan. Tilt the pan slightly and spoon the melted garlic butter over the fish continuously for 1–2 minutes, letting the flavors infuse.
- Finish with Lemon: Add lemon zest, lemon juice, and chili flakes if using. Cook just until the cod turns opaque and flakes easily with a fork (internal temperature ~52–55°C / 125–130°F).
