Directions

  1. Prep the Oven & Potatoes
    Preheat oven to 200°C (400°F). Line a baking tray with parchment paper. Toss halved potatoes with olive oil, salt, and pepper, then spread them evenly on one side of the tray.
  2. Make the Maple Mustard Glaze
    In a small bowl, whisk together Dijon mustard, whole grain mustard, maple syrup, soy sauce, lemon juice, and minced garlic until smooth and well combined.
  3. Prepare the Salmon
    Place salmon fillets on the other side of the baking tray. Brush each fillet generously with the maple mustard glaze. Season lightly with salt and pepper.
  4. Roast Salmon & Potatoes
    Roast in the preheated oven for 12–15 minutes, or until salmon is cooked through and flakes easily with a fork, and potatoes are golden and crispy.
  5. Optional Glaze Boost
    For extra caramelized flavor, brush the salmon with additional glaze halfway through baking.
  6. Serve & Garnish
    Drizzle any remaining glaze over the salmon, sprinkle with fresh parsley, and serve immediately alongside the crispy roasted potatoes.
